Food grade Xanthan gum is a high molecular weight polysaccharide product mainly derived from starch, it is able to dissolves in cold and hot water, the solutions are very viscous, highly pseudoplastic and very resistant to variations.

Xanthan gum shows excellent freeze / thaw stability and is compatible with all commercial thickeners and acid & alkali tolerance, heat stable, pH stable, etc.
